Nutritionist Warns About Common Rice Reheating Mistake

Leftover rice is a common part of many Indian meals, but a simple mistake while handling it can make you seriously ill, warns nutritionist Dr Amy Shah.

Many people assume rice is safe to eat the next day if it looks and smells fine. However, Dr Shah explains that harmful bacteria can grow quickly if rice is not stored or reheated properly. “The biggest mistake is letting cooked rice sit out on the counter all day,” she said. “Even if you think it’s fine, one bad bout of Bacillus cereus food poisoning is enough to make you regret it.”

Refrigeration is actually helpful, Dr Shah says. “After cooking, cool your rice quickly and store it in the fridge overnight. Some of the starch becomes resistant starch, which is good for your gut and helps control blood sugar.” The danger comes from rice sitting at room temperature for too long, which allows bacteria to multiply.

The nutritionist advises following a simple routine to stay safe: cook the rice, cool it quickly, store it in a tightly sealed container in the fridge, and reheat it only once before eating. Doing this can prevent serious food poisoning and even hospital visits in extreme cases.

This advice is particularly important for students, office workers, and anyone who frequently saves meals for the next day. “This was one of the most basic food safety lessons in medical school,” Dr Shah said. “It’s a real warning for everyone.”

By following proper storage and reheating practices, you can enjoy leftover rice safely without putting your health at risk.
